Easy, refreshing meals

One thing summer means to me is easy meals with simple ingredients. Actually, simple recipes are something I take comfort in all year long. This summer I promised my family that as part of living at home (as opposed to college) I will make at least one meal a week. That means I will be spending some time searching through blogs, magazines and good old fashioned recipes to find some delicious summer meals to try out. Thankfully, my sister has a subscription to Food Network and my mom has an abundance of recipe books. Those gave me some ideas and I found more online.

Foodie Bride: Margarita Popsicles

The bad thing about making fresh pizza in summer is that it heats up the house. The good thing about making fresh pizza in summer is that it is absolutely delicious! I don’t know about you, but pizza is one of my all time favorite foods. I like trying all kinds of different toppings. It is a comfort food that can be healthy too. When searching some of the blogs I follow for new recipes to try out, I came across a spinach mozzarella pizza recipe by Kim over at Lovin’ From the Oven. Her recipe for a healthy and simple pizza not only looks delicious, but also suggests using Trader Joe’s pizza dough, which I appreciate. There is a Trader Joe’s is where my family does a lot of grocery shopping.

Now the question is what to drink. What goes better with pizza than ice cold soda or a nice beer? How about a freezing cold margarita popsicle? That sounds good to me. For the past week I have been craving a margarita popsicle and just need to invite some friends over so we can have a margarita infused popsicle party. After looking over quite a few recipes for margarita popsicles, I decided the one from Shwanda over at Confections of a Foodie Bride is the one I will end up making for my future summer barbeque guests.

The pizza and margarita popsicles seem best for a get together, but the meal option below is one that will be good any time.

Fish Tacos With Watermelon Salsa

Fish tacos are an essential summer menu item in my book. I plan on making them several times this summer along with shrimp burritos and chicken nachos. The watermelon salsa in this recipe from Food Network magazine adds an unconventional splash worth trying.

Watermelon infused water would go perfectly with the fish tacos. What is watermelon infused water you ask? That’s just a fancy way of saying water with some watermelon slices floating around in it, but I like being fancy and saying it that way. My favorite blog, A Beautiful Mess, has a blog post called “3 Easy Infused Water Recipes” on what things you can have floating around in water to make it tasty. I take comfort in that since I’m one of those weird people who doesn’t like water much. These pretty ideas will make it so much better.

This week I will be testing out fish tacos and infused water recipes to report back with pictures of the adventures. Later skaters!
