
Simple, moist and flavorful chicken breasts are easier than you think to make and only require a few pantry staple ingredients.
I included this recipe for oven baked lemon chicken breasts in my barbecue chicken sandwiches blog post earlier in the month, but I think it also deserves it’s own standalone post.
Adapted from Ina Garten’s lemon chicken breasts recipe.
Oven baked lemon chicken breasts
1 1/2 pounds cooked chicken breasts
1/cup olive oil
2 tbsp butter
1 1/2 tsp minced garlic, or 3 cloves garlic, minced
1 large lemons or up to 3 small lemons
Salt and pepper
Preheat the oven to 400 degrees F.
Warm the olive oil and butter in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don’t allow the garlic to turn brown. Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 1-inch slices and tuck among the pieces of chicken.
Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes.
