Beef and Veggie Stir Fry

When I’m planning my meals for the week, stir fry makes it on the list almost every time. It’s quick, easy and can be made so many different ways with a variety of veggies.

I developed this Beef & Veggie Stir Fry recipe after JSL Foods contacted me about their Fortune Asian Noodle Blogger Recipe Challenge. I developed this recipe with the Yakisoba Hot & Spicy Noodles. The noodles turned out to be super simple to cook and delicious to boot. This stir fry is perfect for a busy weeknight and it makes incorporating veggies seem easy.

The spice packet is spicy enough for most but I love heat so I added in some chili powder to soy sauce to make a marinade for the beef.

I’m just cooking for two (myself and my boyfriend), so we almost always have leftovers, but I don’t mind that because it means I can look forward to a great lunch the next day. And nothing beats leftover stir fry. Just add a little water to the pan (or bowl if you microwave it) so it doesn’t taste a bit dried out and you will be good to go.

Beef & Veggie Stir Fry with Fortune Noodles

1- 2 tbsp. soy sauce
1 teaspoon chili powder
Between .75 and 1 lb beef
1/2 cup shredded carrots
1/2 head cabbage, thinly sliced
1 package Yakisoba stir fry noodles with Hot & Spicy Flavor Packet
About 2 tablespoons cilantro

Add soy sauce and chili powder to small bowl. Blend. Pour over beef and make sure the beef is evenly coated.

On medium heat, cook beef to your liking in large stir fry pan. Set aside when browned on all sides (about 5 minutes).

Add carrots and cabbage to the pan used to cook the beef. Cook until carrots and cabbage are soft (about 3 minutes).

Run noodles under warm water or microwave for one minute to loosed them up. Add noodles to the center of the pan. Measure out 1/4 cup warm water and add flavor packet to the water. The flavor packet should mostly dissolve. Pour water with flavor packet into the pan. The noodles will loosen up.

Take the pan off the heat. Add the beef back into the pan. Garnish with cilantro. Serve.
